Can you tell that we love muffins? Here you have a easy and simple yoghurt muffins mixture!
1 175ml Pineapple Yoghurt (Use the empty pot/ container afterwards to measure)
3 potfuls of self raising flour (175ml x 3)
2 potfuls of sugar (175ml x 2)
1 half pot of oil
1 potful of milk (175ml)
Step 1: Heat the oven for 10 minutes on 220 degrees. Mix the yoghurt, flour, sugar, oil, the two egg yolks and the milk.
Step 2: Whisk up the two whites of the eggs and fold into mixture.
Step 3: Pour into greased baking tray and bake for 25 minutes.
We left the mixture in a bit longer than 25 minutes and it turned out cripsy on the outside and soft and moist on the inside. If you prefer light and fluffy muffins than bake for only 20 – 25 minutes.
Add your choice of topping and enjoy!
