Make & Bake: Quick & Easy Coconut Tartlets

This is a really quick and simple recipe if you are in the mood for a treat. It can be made for snacking on, with your coffee; tea or served to guests as part of dessert. These mini tartlets are so cute and small that you do not need to feel guilty about its calorie content :)!

INGREDIENTS

THE PASTRY

x2 Cups of cake flour

3/4 (three quarter) cup of sugar

125 grams of butter

1 teaspoon vanilla essence

1 egg

1 pinch of salt

THE FILLING:

x2 Cups of coconut

1/2 (a half) Cup of sugar

1 Cup of water

STEPS:

Step 1 –  Mix all of the pastry ingredients together thoroughly.

Step 2 – Boil all of the filling ingredients together on the stove until the water is reduced. Add one stick of cinnamon to the filling while boiling.

Step 3 – Once you have completed Step 1 roll out  this pastry completely.

Step 4 – Cut out little circles of pastry.

Step 5 – Grease the muffin tray.

Step 6 -Press the round circles of pastry in the muffin tray.

Step 7 – Put 1/2 (a half) of teaspoon of jam into pastry cup.

Step 8 – Put a generous dollop of coconut mixture into the pastry cup in the muffin tray.

Step 9 – Bake in the oven at 180 degrees until it is golden brown.
